Red Ash Italia provides craft Italian fare, from wood-fired specialties to housemade pasta, plus wine in rustic-modern digs.
Available currently for takeout 4:30 p.m. to 9 p.m. Tuesday to Sunday Dining room and bar to reopen in near future.
Halibut in Parchment
Ingredients: per person
Season halibut with salt and white pepper, rub with olive oil.
Place halibut in center of paper.
Place vegetables around halibut.
Splash with Pinot Grigio.
Place into an oven preheated to 400 degrees.
Bake until just done, approximately 10 minutes depending on thickness of fish.
Remove from oven to serving platter.
Pull top portion of paper off.
Sprinkle with basil and olive oil.
